Pan Fish Tacos
INGREDIENTS
1 1/2 pounds pan fish or favorite fillets
3 TBS olive oil
4 TBS lime juice
3 green onions (chopped)
1/8 TSP garlic (minced)
2 cups cabbage (shredded)
1/4 cup fresh cilantro (chopped)
1/4 cup mayonnaise
1/2 package of taco seasoning
8 medium tortillas
1 jalapeno deseeded & minced (optional)
DIRECTIONS
Place fish in a zip-lock bag with 2TBS lime juice, garlic and the taco seasoning. Turn the bag multiple times to blend ingredients together and coat the fillets, then refrigerate. In a large bowl, combine cabbage, mayonnaise, 2 TBS lime juice, 1/4 cup cilantro, green onions and jalapeno. Mix well and refrigerate.
Heat olive oil in large skillet over medium heat and pan-fry fish fillets with the zip-lock bags ingredients for 3 minutes per side (depending on size) or until done. Heat tortillas in a frying pan for 30 seconds per side or 20 seconds in microwave. Place fillets on tortilla and top with the slaw.
TACO SEASONING
If you would like to make your own taco seasoning, In a small bowl, mix the following spices together.
(will be close to the amount in a taco seasoning package)
2TBS chili powder
1/2 TSP onion powder
1 TSP paprika
1 1/2 TSP salt
1/2 TSP garlic powder
1/2 TSP oregano
1 TSP cumin
1 1/2 TSP pepper
